Leftover Dal with Roti and Carrot Sabzi

Reheated red lentil dal and carrot sabzi from the previous dinner served with roti.

Ingredients

  • 1 cupred lentil dal (cooked, refrigerated)
  • 0.5 cupcarrot sabzi (cooked, refrigerated)
  • 2 piecewhole wheat roti

Method

    Spoon the leftover dal into a small saucepan and warm over medium heat for 2–3 minutes, stirring occasionally and adding a splash of water if it has thickened overnight.

    While the dal heats, place the carrot sabzi in a microwave-safe bowl and microwave on high for 45–60 seconds until warmed through.

    Warm the rotis one at a time directly on a medium-hot tawa or dry skillet for about 20 seconds per side until heated through and slightly puffed.

    Plate the dal in a bowl, carrot sabzi on the side, and serve with the warm rotis.
