Caprese Sandwich on Ciabatta

Fresh mozzarella, ripe tomato, and basil layered on toasted ciabatta with a drizzle of olive oil and balsamic glaze.

Ingredients

  • 1 piececiabatta roll
  • 85 gfresh mozzarella
  • 1 pieceripe tomato
  • 6 piecefresh basil leaves
  • 1 tbspextra virgin olive oil
  • 1 tbspbalsamic glaze
  • 0.25 tspflaky sea salt
  • 0.25 tspblack pepper
  • 1 cupmixed greens
  • 0.5 piececucumber
  • 0.5 piecelemon

Method

    Slice the ciabatta roll in half and toast both cut sides in a dry pan over medium-high heat for 1–2 minutes until golden and crisp.

    While the bread toasts, slice the tomato and fresh mozzarella into rounds about 5mm thick, and pick the basil leaves from their stems.

    Drizzle the cut sides of the toasted ciabatta with olive oil.

    Layer the bottom half with alternating slices of mozzarella and tomato, then tuck the basil leaves in between.

    Season generously with flaky sea salt and black pepper, then drizzle the balsamic glaze over the top.

    Press the top half of the ciabatta down gently and slice the sandwich in half diagonally.

    For the side salad, toss the mixed greens with thinly sliced cucumber, a squeeze of lemon juice, a drizzle of olive oil, and a pinch of salt and pepper. Serve alongside the sandwich.
