Leftover Sambar Rice with Curd and Papad
Wednesday's sambar rice reheated and served with a small bowl of fresh curd and a crispy papad — a satisfying no-cook leftover lunch.
Ingredients
- 1.5 cupleftover sambar rice
- 0.5 cupplain curd (yogurt)
- 2 piecepapad (urad dal or rice papad)

Transfer the leftover sambar rice to a microwave-safe bowl, sprinkle a tablespoon of water over it to prevent drying, and microwave on high for 1.5 to 2 minutes, stirring once halfway through, until heated evenly throughout.

If you don't have a microwave, reheat the sambar rice in a small saucepan over medium-low heat with a splash of water, stirring gently for 3 to 4 minutes until warmed through.

While the rice heats, roast the papads directly over a gas flame for 20 to 30 seconds per side, turning with tongs, until they puff and get light brown spots — or microwave each papad for 30 seconds on high.

Spoon the fresh curd into a small bowl alongside the reheated sambar rice, serve the crispy papads on the side, and eat immediately while the papads are still crisp.
